• Winery description: Ayala -since 1860- is a relatively small champagne house, but produces high-quality champagnes. This boutique winery has been owned by the Société Jacques Bollinger since 2005. Grapes come mainly from Grand and Premier Cru vineyards and only the first pressing (cuvé) is used. All wines age considerably longer than the appellation requires. Characteristic of Ayala is the low dosage of added sugars. The result is a champagne with a very low residual sweetness and therefore a drier, more pure taste.
